papaya basketYou won’t believe this breakfast-the touch of curry and richness of yogurt is just enough to wake you up, and remind you why the morning is the best time of day. If you can’t find crystallized ginger, don’t turn the page-currants will work too, and the dish will be even sweeter.

Ingredients:

2 ripe papayas
2 cups red seedless grapes
1 cup low fat or fat free plain yogurt
1 tablespoon honey
1/4 teaspoon curry powder
1 tablespoon chopped crystallized ginger
1/4 cup chopped Brazil nuts, toasted

Directions:

Cut papayas in half lengthwise; scrape out seeds and arrange cut side up in shallow bowls. Fill cavities with grapes. Combine yogurt, honey and curry powder; mix well. Drizzle over fruit; top with ginger and nuts.

Tips:

If you can find it, use ginseng honey. Its bright, sprightly flavor lightens the honey and makes the fruit sparkle.

Substitutions:

Brown sugar may replace the honey, cinnamon may replace the curry powder; and toasted cashews, almonds or mixed nuts may replace the Brazil nuts. Ground cinnamon is especially sweet here.
